Lessons at Woodstock's: How to Toss Pizza Dough

Spinning pies is a tradition at downtown Davis pizzeria.

Jayson Lamoree is tossing rounds of dough high into the air during the lunch rush on a Tuesday afternoon. The line inside is nearly to the door, but nobody seems impatient. They're stopped, mesmerized by the spinning pizzas to-be.

The time-honored pizza tradition is signature at Woodstock's Pizza, a place close to a lot of hearts in California and a staple for college students in Chico, San Luis Obispo and Santa Barbara.

Lamoree, a 25-year-old Davis resident, took a couple minutes to give us some tips on how to spin dough. Here's what he had to say: 

  • Start by tossing around a wet hand towel. If you can do that, take a throw pillow and do the same.
  • You'll know when you're ready for dough when those small pillows are shot, Lamoree said. "They'll all have a hole in the middle because of the spin."
  • Use a rolling machine to get the dough flat.
  • Practice, practice, practice. "It's all about finesse."

So which size of pizza is most fun to spin? Lamoree said it's got to be the extra large.

Missing Davis Woodstock's? Manager Dee Clark said there will be a "Back to Woodstock's" celebration this fall, Oct. 7-8 at the restaurant on 2nd and G streets. Specials will include "Buck Day," featuring $1 slices.
