Latin-Themed Vegan at Fortify in Downtown Winters (PHOTOS)

Fortify is a new healthy restaurant at Briggs & Co. in downtown Winters.

My wife and I enjoyed some seriously good food in my hometown of Winters for Valentine's Day at a restaurant that hasn't even officially opened yet. 

The restaurant is called Fortify, and it's part of the Briggs & Co. art gallery that is scheduled to open in a couple of weeks.

We attended the first of Fortify's Heart to Heart series. (More information available in the photo slideshow). The meal, which was Latin-themed vegan, started with rawcos. (Pronounced like tacos and eaten similarly, but the shell is a leaf of romaine lettuce or cabbage and everything inside is vegan and raw. Nuts, tamare, avocado, and deliciousness). 

The rawcos were followed by vegan tacos filled with cauliflower, turnips and other ingredients. Side dishes were beans, rice and quinoa. We also enjoyed a few margaritas and dessert, which consisted of roasted pears with nuts and coconut ice cream.

Owner Shaunie Briggs briefly told the story of her son's near-death experience with Ulcerative Colitis, which doctors told her had nothing to do with diet. The illness only got worse, until the family changed their diet away from processed foods and toward raw, plant-based, whole foods. The symptoms almost immediatly dissapeared. 

The meal was great and the evening was loose and fun. Fortify and the new Briggs & Co. gallery are located at 314 Railroad Boulevard, in Winters.
